Cauliflower Fried "Rice"

Who doesn't love fried rice?  This was so good, you won't even miss the real thing!  If you've never had cauliflower rice, trust me, you will not be disappointed.  Cauliflower rice is one of my favorite ways to eat vegetables.  This dish is loaded with veggies!!


Cauliflower Fried "Rice"


Ingredients:

1 large head of cauliflower, chopped into "rice"

1 red bell pepper (180 grams), chopped

1 yellow bell pepper (180 grams), chopped

Yellow onion (180 grams) chopped 

Shredded carrots (100 grams)

2 garlic cloves

1 egg

4 TBS egg whites

1 Tablespoon sesame oil

4 Tablespoons coconut aminos (or liquid aminos) 

1 teaspoon Sriracha 

2 Tablespoons lime juice 

Salt and pepper to taste

Chopped cilantro for topping, optional

 

Instructions:

Heat pan over medium heat sprayed with Olive Oil cooking spray.  Once pan is heated, add onions, bell peppers, carrots, and garlic and sesame oil.  Cook until bell peppers are soft and onions are translucent.

While those are cooking, start preparing your cauliflower and eggs. 

In a separate pan, cook egg and egg whites.  Set aside the eggs. 

 

I chopped the cauliflower in a food processor. It makes it much easier to cut it into rice size pieces. 

Add cauliflower rice to pan with with bell peppers, onions, carrots, and garlic.  Add the coconut aminos, lemon juice, salt, pepper, and sriracha.  Cover with lid and cook for about 6 minutes, or until cauliflower is soft.  

Once cauliflower is cooked, add in eggs, and mix it all together! 

This made a total of 5 servings.  I added 3 ounces of chicken to 2 servings of cauliflower rice for my meal, and topped it off with chopped cilantro.  It was delicious!!
