Buffalo Chicken and Bacon Balls
/I've always got a craving for buffalo chicken!! This may be considered more of a cheat meal, but it is Oh So Good!!!
Buffalo Chicken and Bacon Balls
INGREDIENTS
1.5 pounds ground chicken
2 slices of bacon, cooked, chopped
4 ounces raw cheddar cheese, shredded
150 grams mashed sweet potato
1/4 cup gluten free flour
1 egg
1 teaspoon sea salt
1 teaspoon garlic powder
1 1/2 teaspoon dried dill
1/4 cup Franks hot sauce.
INSTRUCTIONS
Preheat oven to 400 degrees. Spray a large baking sheet with cooking spray.
Mix all ingredients in a large bowl.
Confession: I used Philadelphia cream cheese. I know, I know. Not the best choice. It was all I had in the refrigerator, and I REALLY wanted to add some cheese. But stick with the raw cheddar cheese for better ingredients. So yummy!!
Roll into balls and place on greased baking sheet. I made 18 large balls. Bake for 22-25 minutes (depending on the size).
Toss chicken balls in 1/4 cup hot sauce.
