Sweet Potato Nacho Pizza Casserole

I am so excited to share this recipe with yall!!!  It is THAT GOOD.  I'm a "everything in moderation" type of girl.  Dairy does not give me problems like some other people, so I'll have it in my diet from time to time.  I ALWAYS encourage whole foods over processed, but I do not enforce complete elimination of certain foods in my nutrition plans unless there are specific dietary restrictions or health problems that a client deals with.  You could certainly make this meal without dairy, and it would still be incredibly tasty, but the dairy gives it that "pizza" feel that I was going for.  The beef is seasoned with a dry ranch seasoning mix.  You can use this recipe from the Pioneer Woman to make the seasoning homemade.  


Sweet Potato Nacho Pizza Casserole


Serving size:  6 

Macros per serving:  

  • 13.5 grams fat
  • 34 grams carbs
  • 27.5 grams protein 

INGREDIENTS

  • 1.25 pound 93% lean ground beef
  • 18 slices of mini turkey pepperoni (I used Bridgford)
  • 5 small sweet potatoes (approximately 800 grams), sliced into thin 1/4 inch rounds
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 ounce dry ranch seasoning
  • 1 cup pizza sauce, preferably one with no added sugar
  • 4 ounce Colby Monterey Jack cheese
  • 1 ounce grated Parmesan
  • 1 Tablespoon Olive Oil
  • Sea salt, to tase
  • Garlic powder, to taste

METHOD

Preheat oven to 425 degrees.  Toss the sweet potato rounds in olive oil, salt, and garlic powder.  Spread out on a large baking pan.  Roast for 30-35 minutes, turning half way through to ensure even cooking.  

Over medium heat, cook ground beef on stovetop.  Once the meat is brown, add the ranch seasoning.  

Layer the sweet potato chips in the bottom of a casserole dish and around the sides.  You can layer the rest however you like, but this is how I did it:

Ground beef, half of bell peppers, pizza sauce, last half of the bell peppers, Colby Monterey jack cheese, Parmesan cheese.

Put back in oven for about 10 minutes.  The cheese should be all melted and gooey.  Yum!!
