Lemon and White Wine Spaghetti Squash with Parmesan Crusted Cod

I love spaghetti squash.  It's light and slightly sweet, and in my opinion, pairs perfectly with many different sauces.  

Beware that the sauce with this dish is strong.  But the combination of the lightly flavored fish, subtle sweetness of spaghetti squash, and saltiness from the Parmesan cheese bring all the flavors together perfectly.

Lemon and White Wine Spaghetti Squash with Parmesan Crusted Cod  


INGREDIENTS

  • For the cod:

4-6 cod fillets

1/4 cup grated Parmesan cheese

1/4 cup gluten-free flour

2 Tablespoons (more in needed) lemon juice 

1 Tablespoon Italian seasoning

  • For the sauce:

1 cup chicken broth

1 cup white wine

3 Tablespoons butter

3 Tablespoons lemon juice

1 Tablespoon white wine vinegar

1 Tablespoon Dijon mustard

1 Tablespoon heavy cream

1 shallot, finely diced

Black pepper, to taste

  • Large spaghetti squash, approximately 3 lbs 
  • Grated Parmesan cheese for topping

METHOD

How to prepare the squash:

Poke squash with fork a few times.  Cook in microwave for 10-12 minutes, depending on size.  Squash is done when you can easily poke through with fork.  Careful pulling it out of the microwave.  It will be hot!!  Cut in half, scoop out seeds, and shred squash with a fork.  

How to prepare the sauce:

Spray a large skillet with cooking spray and heat over medium-high heat.  Add shallot and cook for a few minutes, until translucent.  Add white wine, chicken broth, lemon juice, dijon mustard, and white wine vinegar.  Whisk until mixed well and bring to a boil.  Reduce heat and allow sauce to simmer until it starts to reduce.  Add butter, heavy cream, and black pepper.  Keep sauce heated on low while cod is baking.

How to prepare cod:

Preheat oven to 400 degrees.  Add lemon juice in a shallow bowl.  Mix Italian seasoning, flour, and parmesan in a separate bowl.  Add salt to mixture if needed.  Dip cod in lemon juice first, then coat in parmesan mixture.  Place cod on a sprayed baking sheet.  Bake for 10-15 minutes.  Move fillets to broiler for a few minutes to brown.

Top your spaghetti squash with the sauce.  Add baked cod, and top your dish with grated parmesan cheese.  This is a complete and delicious meal.  Enjoy!!
